Emmer is a close relative to the Durum wheat and has been grown for centuries in remote parts of Italy. Known as Farro in Italy this wheat is often referred to as the ancestor of modern wheats. Farro comes from the Latin “Far” hence the Italian word for flour – Farina.
Emmer Flour is great for making pasta, due to its similararities to Durum wheat. You can also add emmer flour to bread doughs. Try blending Emmer with other strong white flours to create extra interest and flavour in your sourdough.
Emmer was one of the first cereals to be domesticated in the old world; it was cultivated from around 9700 BC in the Levant and subsequently in south-western Asia, northern Africa and Europe with the spread of Neolithic agriculture.
