Renowned for its delicate flavor and wholesome texture, is meticulously crafted using wheat flour sourced exclusively from the fields of the South West of England.

Cultivated with care and dedication, our Spelt grains are grown without the use of chemicals or pesticides, ensuring the highest quality and purity in every bite. Handcrafted with traditional methods and a passion for excellence, our Spelt pasta offers a deliciously nutritious option for discerning palates.

The term "radiatori" in Italian directly translates to "radiators" in English. Interestingly, some pasta artisans claim to have drawn inspiration for the shape of radiatori from the radiator grill of a motor car.

Radiatori pasta is characterized by its short and chunky form, featuring ruffled edges that add both texture and visual appeal when served. The unique shape of radiatori maximizes the surface area of the pasta, allowing it to effectively absorb and capture sauce, especially those with finely chopped ingredients that can settle into the folds. Given its relatively recent invention, there aren't established traditional methods for cooking radiatori. However, it pairs excellently with any tomato-based sauce or pesto.

Capparelli uses traditional bronze dies to achieve a rough texture that holds more sauce. Their pasta is slow-dried at low temperatures (maximum 38°C) for 24 to 30 hours, preserving flavor and texture.

Capparelli sources their flour from the Prime Terre project, which supports local farmers in Southern Italy, ensuring the sustainability and local origin of the wheat grains. They also source British grains for their ancient pasta varieties (einkorn and white spelt).

Carlos, founder of Capparelli, spent nine years working closely with Yotam Ottolenghi, the chef-patron behind Ottolenghi group, across several of the London restaurants, including his role as head/exec chef of NOPI in London's Soho.
