Khorasan (Triticum turgidum ssp. turanicum) is an “ancient wheat” grain, similar to einkorn, emmer and spelt which consist of land races, i.e. are made up of many closely-related strains. Khorasan is made from an ancient Durum wheat relative and is named after the Khorasan region of Northern Iran
Khorasan is sometimes also known as Kamut or Pharaoh grain, which is down to the fact that grains were discovered in ancient Egyptian tombs.
The Khorasan wheat is gently stone-milled at Shipton Mill and produces excellent quality wholemeal flour, which is suitable for many different types of bread and also pasta. Although not completely gluten-free, there have been reports of people with intolerances to modern wheat enjoying Khorasan without issue.
