Matthews Cotswold Wholegrain Spelt Flour is rich in flavour and a great healthy option with it being easier to digest rather than normal flours. Mix with our Cotswold white flour for pizza making to give you the perfect crust texture.

Milling and Provenance: Spelt has been called an ancient grain. Spelt like many similar grains originates from the middle east over 9000 years ago. Spelt has this unique nutty almost sweet flavour. Spelt is a hulled wheat which means the outer hulled layer must be removed before milling. This is done using a de-hulling machine. Our grain partnership farmers work together and share a machine on one farm with all the other farmers sending there hulled spelt to one location. The spelt is then picked up by the Matthews grain drivers 29T at a time and delivered to the Matthews Cotswold Flour Mill.
Health Benefits: Spelt is high in fibre which is important for managing cholesterol. Fibre in Spelt can help you to digest food faster. Rye is also rich in dietary fibre, which increase the viscosity of food mass. This all helps make the bread feel lighter to eat and digest.

Did you know: Spelt is sometimes referred to is “Farro Grande” (Triticum spelta) is one of the three original Ancient Grains. Spelt has been cultivated for over 5000 years. “Grande” refers to the fact the grain is bigger then Einkorn and Emmer.

Please note that Ratton Pantry will be closed on Monday 5th May. During this time, we will not be dispatching orders or be available to speak to via our customer service department.
Please place your order by Thursday 1st May 2pm selecting a next business day service, or by Friday 2nd May 2pm selecting Parcelforce Saturday delivery, to receive your order for the bank holiday weekend.
Any orders placed after 2pm Friday 2nd May will not be dispatched until we return to work on Tuesday 6th May.

The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s not a bad office view!
The Matthews family have spent over 100 years developing, improving and innovating to consistently produce the very best flour and baking products. Today, the company is led by father and son team Paul and Bertie Matthews – FWP Matthews’ great, great grandsons. This sustained passion and expertise passed down through generations, continues to inform every step of our process – from our local ethos to our traditional methods.
