Capparelli Casarecce Artisan Premium 100% Italian Durum Wheat Pasta.

Capparelli's "Classica" pasta is crafted from 100% premium Italian durum wheat.

This high-quality wheat is sown, grown, and harvested in Puglia, Tuscany, Sicily, and Campania, thanks to a collaborative effort with the dedicated farmers of the Coldiretti association within the Prime Terre project.

Also referred to as 'casareccia' in certain regions of Italy, casarecce is a type of short pasta characterized by its curled edges and a central groove. The term "casarecce" translates to 'homemade', reflecting its traditional preparation method of rolling small rectangles of dough around a thin wooden pin or metal rod known as a 'ferro' in Italian.

Originating from Sicily, casarecce has garnered popularity throughout Southern Italy. As such, it pairs exceptionally well with sauces rooted in Southern Italian culinary traditions, featuring quintessential Mediterranean ingredients like eggplant, tomatoes, cheese, and basil. It is also commonly enjoyed with seafood or fish, such as swordfish.

In Sicilian cuisine, casarecce often accompanies Sicilian pesto, adding to its regional charm and versatility.

Capparelli uses traditional bronze dies to achieve a rough texture that holds more sauce. Their pasta is slow-dried at low temperatures (maximum 38°C) for 24 to 30 hours, preserving flavour and texture.

Capparelli sources their flour from the Prime Terre project, which supports local farmers in Southern Italy, ensuring the sustainability and local origin of the wheat grains. They also source British grains for their ancient pasta varieties (einkorn and white spelt).

Carlos, founder of Capparelli, spent nine years working closely with Yotam Ottolenghi, the chef-patron behind Ottolenghi group, across several of the London restaurants, including his role as head/exec chef of NOPI in London's Soho.
