Stoneground Ancient Cotswold Crunch is a pioneering artisanal blend of three unique Ancient Grains. The distinctive flavours of wholegrain Emmer and Einkorn combined with Cotswold White Spelt have been blended with torrefied spelt flakes for an unforgettable flavour and bake quality. The result is a stretchy and pliable dough that’s effortless to work with.
Milling and Grain Provenance: Emmer, Einkorn and Spelt are three of the oldest grains in the world some varieties of 10,000 years old. They are the original domesticated wheats, and in there true ancient form are untainted by modern modification. These three grains are often referred to as “farro” grain. Farro Piccilo (Einkorn) (Piccilo = Small) (The grandfather of all grains) Farro Medio “Emmer” (Medio = Medium), Farro Grande “Spelt” “Grandson” (Grande = Big). The ancient grain are conditioned in 100-year-old handmade traditional pine wood grain houses.

Top Tip: Proving or “Retarding” in a fridge overnight will develop the flavours of the grain in the dough. It will also make the dough easier to handle and score before baking.

Please note that Ratton Pantry will be closed on Monday 5th May. During this time, we will not be dispatching orders or be available to speak to via our customer service department.
Please place your order by Thursday 1st May 2pm selecting a next business day service, or by Friday 2nd May 2pm selecting Parcelforce Saturday delivery, to receive your order for the bank holiday weekend.
Any orders placed after 2pm Friday 2nd May will not be dispatched until we return to work on Tuesday 6th May.

Here at Ratton Pantry, sustainability and being environmentally conscious is core to our business and work ethic. We employ a number of working standards to ensure that we reuse materials and packaging where possible along with keeping wastage within the business to a minimum.
Our orders are packaged with recycled paper packaging tape, which is made from recycled material and is itself fully recyclable after use. We use environmentally friendly packing 'chips', which are made from renewable sources. These chips are biodegradable, fully compostable and also GM free. The majority of the boxes that we use are sustainable FSC approved and made from recycled materials.

With a milling legacy spanning eight generations, Matthews Cotswold Flour is one of the UK’s oldest family-run flour mills. Trading grain and milling flour in the heart of the Cotswolds since the 1800s. The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s not a bad office view!
The Matthews family have spent over 100 years developing, improving and innovating to consistently produce the very best flour and baking products. Today, the company is led by father and son team Paul and Bertie Matthews – FWP Matthews’ great, great grandsons. This sustained passion and expertise passed down through generations, continues to inform every step of our process – from our local ethos to our traditional methods.
