What is an Improver and why should you use it?
Improvers are mixtures of substances that each contribute specific functions in dough mixing, proofing, and baking of various bread and Vennoirserie products.
It helps fight against inconsistency in batching and will help to prevent line stoppages caused by sticky or otherwise unusable dough. One poor batch can be the difference in making your quota, and perhaps even your profits for the day.
Bread improver makes the baking process more manageable.
The most functional components of improvers are emulsifiers, enzymes, and flour treatment agents. Each ingredient provides technological benefits to the dough by interacting with the flour components. Some of these interactions complement those of others, so an improver needs to be carefully balanced to provide the correct characteristics in the finished baked product.
Enzymes are denatured during baking and are treated as processing aids, therefore they need not be labelled. Emulsifiers and flour treatment agents are E-number additives and must be labelled. Where a ‘Clean Label’ product is needed, enzymes can be used to replace E-numbers.
How much Improver do I need?
We recommend the following dosage of Bread Improver per grams of flour.
Baguette: 0.3% - 0.5%
Speciality Bread: 0.7% - 1%
Viennoiserie and Brioche: 1%
Ingredients: Emulsifier (E472e), Flour Treatment Agent (E300), Enzyme* (aplha-amylase, xylanase).
*The enzymes are processing aids which are not declared on the labels of final products. May contain eggs, soya, milk, sesame seeds and nuts.

Please note: All smaller quantities that are purchased (less than 16kg or 25kg) are decanted by our trained staff into food-grade, recyclable flour bags in our 5* hygiene-rated premises. All decanted bags will come fully labelled with product name, expiry/BBE date and production/batch number.
Larger sacks are made from fully recyclable unbleached paper. Our decanted food-grade flour bags are 100% recyclable and biodegradable.
Packed on premises that handles nuts (including peanuts), seeds, cereals, soya & products containing gluten.
If purchasing Gluten-Free flours, the product contains no gluten, but it is not packed in a gluten-free environment. However, we make every effort to ensure no cross-contamination occurs. Please be aware that if you order Gluten-Free flour at the same time as other flours, they may be packed together in the same box.
We dispatch orders 5 days a week (Monday - Friday, *excluding bank holidays).
Our same day dispatch cut off time is 2pm. Any order placed after 2pm will be dispatched the following working day. Any orders placed after 2pm on Friday will be dispatched the following working day (normally Monday, *excluding bank holidays).

Please note that Ratton Pantry will be closed on Monday 5th May. During this time, we will not be dispatching orders or be available to speak to via our customer service department.
Please place your order by Thursday 1st May 2pm selecting a next business day service, or by Friday 2nd May 2pm selecting Parcelforce Saturday delivery, to receive your order for the bank holiday weekend.
Any orders placed after 2pm Friday 2nd May will not be dispatched until we return to work on Tuesday 6th May.
We will reopen as normal on Tuesday 6th May. We will endeavour to answer any customer service enquiries placed during the closure period as quickly as possible, but please allow us up to 24 hours to respond.

Orders containing fresh products - Please note that if your order is placed after 2pm on a Thursday, we are unable to dispatch your item on the following working day (Friday) as transit times will be extended over a weekend and therefore the quality of our fresh products can become compromised. Orders containing fresh items will be dispatched the following Monday* (unless a DPD Saturday delivery option has been selected at checkout).

Here at Ratton Pantry, sustainability and being environmentally conscious is core to our business and work ethic. We employ a number of working standards to ensure that we reuse materials and packaging where possible along with keeping wastage within the business to a minimum.
Our orders are packaged with recycled paper packaging tape, which is made from recycled material and is itself fully recyclable after use. We use environmentally friendly packing 'chips', which are made from renewable sources. These chips are biodegradable, fully compostable and also GM free. The majority of the boxes that we use are sustainable FSC approved and made from recycled materials.
